I bought a lot of asparagus at Garak market when we went….a whole lot. I used it for this shaved asparagus salad, but I also got inspired by this recipe for Asparagus Cheese Tarts and decided to attempt something similar last Wednesday. The beauty of the recipe I was looking at was how quick and easy it was since it called for frozen puff pastry. I of course, have no frozen puff pastry though. I did have leftover pizza dough in my freezer (I made a quadruple batch our second week here) so I figured our “cheese tart” would be just fine in pizza format. I sauteed some mushrooms in a frying pan with a little salt and pepper. The asparagus got chopped up into bite-sized pieces and thrown in with the mushrooms and a bit of chopped onion at the very end to warm everything. While that was going on I baked two chicken breasts in the oven. With everything precooked, I used a large bowl to shred the chicken in and then mix it with the mushroom/asparagus/onion mixture. I threw in sour cream and shredded cheddar and stirred it all up. Finally, I dumped the whole thing onto my waiting pizza dough, spread it all out and added some grated parmesan on top. 15-20 minutes in a hot oven produced this:
