Cheesecake Cake with Fresh Strawberries

I should have taken a picture, but I was too busy stuffing my face!

Before we left Ecuador, I had the daunting task of using up all the random stuff in my cabinets, including a box of cheesecake pudding. This is definitely a cheating recipe, but it was also pretty incredible and by far the easiest thing I have ever baked in my life. I apologize profusely for not taking pictures, but I swear I will the next time…and I promise there will be a next time.

First I mixed the pudding up…it was the instant kind so that consisted entirely of pouring in two cups of cold milk and stirring. While the pudding was setting, I mixed one box of yellow cake mix with two eggs. Then I poured the pudding in and stirred it all up. It went into a greased baking dish and cooked at 350F for about 30 minutes. When it was cool, we topped it with freshly cut strawberries and some chocolate syrup. Amazing!! This is something I would definitely make again and if I had a bit more time I might even attempt the pudding and cake mix from scratch although I think the true beauty of this recipe is how ridiculously easy it is.
