I love salmon and it’s a lucky day when we can actually find salmon filets here in Quito. Lately the grocery store has been carrying them in the freezer section and I have been snatching them up (for a small fortune).
I’ve already told my mom that I want a delicious hunk of grilled salmon this summer, but in the meantime, this is what I’m doing with the frozen chunks I can find here:
Please forgive the crappy nighttime lighting. The flash on our camera is blinding, no flash doesn’t work, all our flashlights are currently out of batteries and it gets dark around 6:30 no matter what time of year it is. Is that enough excuses?!
