Mango Chutney Chicken is one of Alex’s favorite meals…and I hate making it. I’m not really sure why, it’s not that hard to make. Alex has suggested that maybe it’s because I have no feelings or that I have a heart of ice. I think it’s more related to how little I enjoy grating ginger and cutting up raw chicken. Either way, I decided to suck it up and treat him to a late birthday dinner.
I follow this recipe to cook up ginger, green onions, chicken, mango chutney and almonds and then serve it over rice.
