This morning I decided to make cornbread…without cornmeal because we didn’t have any. I googled around for information about substituting corn flour and found very mixed opinions. One forum said go for it, it will just make the cornbread less crumbly. Several others said that substituting corn flour was the worst idea on the planet and would end in total disaster. I decided to ignore the naysayers, figuring I could always throw away the disaster if needed. I followed this recipe and simply used the exact same measurement of corn flour instead of cornmeal. It turned out amazing!! It tastes just like cornbread, but is a little fluffier and less crumbly. Delicious!
