I heart my crockpot!
This wasn’t quite as good as the mango bourbon pulled pork that I love to make, but worth trying none the less.
Chicken and chipotle peppers hung out in the crockpot all day with some tomato paste and onions. After school I shredded the chicken and threw it back in for a little bit so it would get nice and juicy. Alex got crusty bread at the grocery store and I piled the shredded chicken on. A little bit of mozzarella and a few minutes in the oven and voila:

This is the kind of meal that would be great with a salad or something, but let’s face it, that extra step frequently doesn’t happen.
How spicy was this? Is it Jesse friendly?

I honestly can't remember how spicy it was. I don't think it was too bad, but it does have vinegar in it! Can you get chipotle peppers down there?
