Alex was planning to climb Cayambe last weekend when he found out 80cm of snow was expected and the trip had to be canceled. We had already planned for a hearty beef stew reward on Sunday so even without the summit, we went ahead with the reward dinner.
A soupier stew, I followed this recipe from Pioneer Woman and added extra veggies (celery and mushrooms). If I made it again, I would probably add even more veggies and potentially cook it for even longer in order to thicken it up more.
I also made cornbread and completely forgot to photograph it.

Did you use yellow carrots or do the orange ones just photograph on that side of the color wheel?
