Beef Stew

Alex was planning to climb Cayambe last weekend when he found out 80cm of snow was expected and the trip had to be canceled. We had already planned for a hearty beef stew reward on Sunday so even without the summit, we went ahead with the reward dinner.
A soupier stew, I followed this recipe from Pioneer Woman and added extra veggies (celery and mushrooms). If I made it again, I would probably add even more veggies and potentially cook it for even longer in order to thicken it up more.
I also made cornbread and completely forgot to photograph it.

  1. Did you use yellow carrots or do the orange ones just photograph on that side of the color wheel?
    Looks good; bet it was tasty as well.
    Can't wait to do some cooking together.
