This peanut butter chocolate fudge was Alex’s belated birthday treat. We ate absurd amounts, gave lots away at school and decided no more fudge for a long time. One of the things I’ve really enjoyed about cooking/baking more is knowing exactly what I’m eating, but when it comes to something like fudge that may not be a good thing! Now I understand why fudge is a special treat that people eat once a year at Christmas!
Fudge here in Ecuador is a bit tricky since I couldn’t find marshmallow fluff. Instead I made my own which nearly made my arm fall off (high speed of an electric mixer for 5 minutes when you don’t have one…yeesh!). We also can’t get peanut butter chips so I substituted chunky peanut butter. It never quite solidified the way it’s probably supposed to, but it tasted delicious just the same.
